Harvesting Lemon Balm

Beautiful Lemon Balm Plant. The lemon balm is doing very well this year and now is the time to harvest some of the leaves. Every year it is different. Last year I had trouble with my lemon balm plants, but this year they are flourishing.
I cut the top third of the plant, leaving it to regrow. I put the harvested leaves in a paper bag. No plastic bags, the leaves will rot before you get them home.
I like to put a bunch of fresh leaves in a jar with water and leave it in the sun for a delicious refreshing drink.
I stick the rest of the leaves into a paper bag and use my car as a dehydrator. If it is too hot the leaves will turn brown so check the bag.
Depending on the weather the plants will dry fast, unless you live where I live and you never know what temperature its going to be from one day to another.
There are plenty of other methods to dry herbs but I use my car a lot especially if I have a small amount to dry. When the leaves are dry store them in a glass jar away from the sun.
